Sauce No. 3 is great for making any kind of curry cooking very simple. Just add it to the mix with coconut milk or a tomato sauce and your spicy-curry meat or fish dish is done!

The pepper in this one is brined Caribbean Scotch bonnet, so it has a medium heat level with a good balance of flavor for the heat.
